Sun Dried Tomatoes



My sister Yuriko does not like tomatoes, BUT she loves ketchup….(sugar?) I bet you she will like sun dried tomatoes because they are sweet. Besides, eating tomatoes helps you against:
-colds, constipation, & dry skin
-diabetes, cholesterol, & high blood pressure
-bad temper, & even cancer (Harvard Medical School)

Mostly dried by the sun outdoors, but I prefer to run my own show and not have unwanted visitors steal my stuff. My oven? Much better idea!
They taste wonderful because the flavor is enhanced, very gourmet. Easy to make at home? YES


  • 10 tomatoes I recommend Roma tomatoes(egg shape) although any kind will do.
  • 1/4 cup olive oil
  • 1-1/2 Tablespoons fresh chopped thyme (or dried thyme)
  • 1/2 teaspoon black pepper


  1.  Wash & remove stem, slice in half, squeeze out juice & seeds (like a lemon)
  2.  Use a cooling rack on top of a cookie sheet (to avoid messy oven). The cooling rack helps air circulate under tomatoes.
  3.  Preheat oven 200 degrees F.
  4.  Drizzle olive oil, black pepper, & thyme. Much easier to put tomatoes and olive oil inside a plastic bag and shake all around. Better distribution, much like when we used to baby oil ourselves under the sun back in the days… a large ridiculous hat & under the shade.
  5. Approx. 5 hours. Ready when looking like dried apricots, and NOT like burnt corn husks from the grill. You may add salt now.
  6.  Let cool at room temperature. We ate ours in two days (refrigerator). Freezing works well too.
    Use individual baggies and divide your treasure.

Try it, you will be amazed & oh so proud. Use them in sandwiches, soups, salads, pasta, on bread, and anywhere where a tomato product is called for.
Once I made meat loaf with them and it was OHH LA LA.
