Chow Mein with Chicken and Vegetables

My family of 4 grown boys love this dish, they always order two, and now I make it often at home. Decent egg noodles will do, Kikkoman brand soy sauce is best, and one secret is to let the noodles absorb most of the sauce ( It’ll taste more like the restaurant and less like grandma’s from Kentucky)

Ingredients

  • 1  chicken breast sliced thinly on bias
  • 1-1/2 Tablespoons fresh grated ginger
  • 3 cloves garlic, minced
  • 2 cups Chinese Nappa Cabbage/regular cabbage
  • 2 cups bean sprouts, rinsed well
  • 1 carrot (I use the vegetable peeler and just peel away and make ribbons)
  • 6 shiitake dried mushrooms soaked in 1/2 cup warm water, save liquid
  • 1 bunch green onions, sliced like toothpicks on the bias
  • 2-3 cups of cooked Chinese egg noodles (spagueti/ramen)

Shiitake mushrooms (dried) have more flavor than fresh ones. They are inexpensive, and even the liquid where you soaked them to bring them back to life is useful in your recipe. Soak them in warm water for 20 minutes, slice them, throw away the stem (very hard to chew)

Ingredients for Sauce

Ingredients

  • 1/3 cup reserved shiitake liquid
  • 3 Tablespoons soy sauce
  • 1 Tablespoon sugar-optional
  • 1 Tablespoon rice vinegar (or apple cider vinegar)
  • 1-2 Tablespoons Sriracha sauce
  • 1 Tablespoon sesame oil
  • 1 Tablespoon corn starch

  Combine all ingredients, set aside

Directions

  1. In a large pan @ medium-high heat cook chicken & ginger, 5-7 minutes depending on how thick you cut the chicken
  2. Add garlic & vegetables, 1-2 minutes
  3. Add noodles & sauce
  4. Toss to coat, then leave on low heat 3-5 minutes or until most sauce is absorbed.
  5. Taste it, adjust seasonings.
