Refrigerate 1 hour

Cut the 2 corners from the bottom of bag. This will make the rolling of the dough easier. (But you could also roll it like normal people do). In that case, get dough out of the bag, sprinkle some flour on both sides of your dough and sandwich it between plastic wrap.


Ingredients for the crust


  • 1 1/4 cup flour
  • 2 Tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 stick butter, chilled and in small cubes
  • 2 Tablespoons ice water
  • 1 gallon size Ziploc bag
  • 1 egg (wash) to brush on crust fold


  1. Combine flour, salt, sugar  and butter cubes inside Ziploc bag. Smoosh it with your hands.
  2. Continue pressing ingredients until they look like small pebbles
  3. Drizzle the 2 Tbsp. of ice water and massage and knead until it looks like “play dough”
  4. Flatten dough and spread around most of the bag.
  5. Refrigerate 1 hour.
  6. Cut the bottom 2 corners of bag, open bag so air can circulate. Start rolling dough from the bottom of bag towards the opening.
  7. 1/8 inch is the thickness desired. If you use a gallon size bag, you will have some excess dough. Throw it away.
  8. Prepare a cookie sheet lined up with parchment paper. Sprinkle some cornmeal/flour.
  9. With scissors, cut the sides of bag and carefully place on cookie sheet. (if dough is too soft to work with, put it back in the fridge for 5-10 minutes)
  10. Place fruit filling in center of your dough, leave a 1 1/2 inch border (for folding)
  11. Make a pretty overlapping fold/just fold it. Brush  edge of crostata with egg wash.
  12. Preheated 450F  25-35 minutes (ore until golden brown)

Ingredients for the Peach filling


  • 4-5 fresh peaches, cut
  • 1/2 cup sugar
  • 3 Tablespoons flour
  • Combine all ingredients in a large bowl

Or if you prefer the Berries Filling


  • 3 cups strawberries
  • 1 cup blueberries
  • 1/2 cup sugar
  • 3 Tablespoons flour
  • Combine all ingredients in a large bowl
