Pot Stickers, Gyoza

                                 Pot Stickers from Scratch (gyoza)

Ingredients

  • 1 1/2 cups ground pork
  • 2 Tablespoons scallions, chopped
  • 2 teaspoons fresh grated ginger (or 1 teaspoon ginger powder)
  • 3 Tablespoons Hoisin Sauce (sold at most supermarkets)
  • 1 garlic clove, finely minced
  • 1 egg white
  • 3/4 cup of boiled green cabbage (after boiled, drain, & place in center of kitchen towel. Wrap towel around boiled cabbage and squeeze out any remaining water)
  • 1 package (3-inch rounds) of gyoza/dumplings wrappers-sold at most grocery stores in the refrigerated section-ask clerk)

Directions

  1. In a small bowl, mix all ingredients except wrappers.

2.  Line up four wrappers on your cutting board. Scoop 1 teaspoon of the ground pork mixture in the center of each wrapper.

3. Dip your finger in a bowl of water and moisten edges of wrapper Fold like a quesadilla. Press and seal edges. Set aside and cover with plastic wrap. Continue until you run out of filling.

4. Add 2 teaspoons of vegetable oil to a nonstick pan @ medium heat. When oil gets hot, pan fry 7 pot stickers. 2 minutes for that side to get golden brown. NO NEED TO TURN THEM OVER.

5. Add 2 Tablespoons of water, lower heat, cover with lid. Pot stickers will finish cooking by steam method. In 3-4 minutes water evaporated. They are ready! Serve immediately.

                                   GYOZA DIPPING SAUCE:

In a small bowl combine: 3 Tablespoons soy sauce, 2 Tablespoons water, 2 Tablespoons rice vinegar/regular vinegar, 1 green scallion green part included, 1 teaspoon fresh grated ginger, and 1/2 teaspoon of sesame oil.  Enjoy
