                                     No-Bake Fresh Blueberry Cheesecake with Granola Crust


  • 2 cups store bought granola and 1/2 cup pine nuts
  • 2 pints fresh blueberries
  • 1 pkg cream cheese
  • 2 cups heavy whipping cream (or yogurt if bikini season is near)
  • 1/2 cup confectioners sugar



  1. Pour granola and pine nuts on bottom of medium size container
  2. Whip heavy cream until soft peaks, add confectioners sugar and cream cheese. Pour on top of granola.
  3. Fresh blueberries on top and you are set to go.

A yummy healthier version of a No-Bake cheesecake with fresh fruit. No guilt feelings here, husband and I ate the whole thing in one sitting. Catholic upbringing yet not guilty enough.
