Quinoa and Kaniwa Salad Recipes that Tastes Good and Healthy

Healthy Quinoa Salad Recipe with vegetables that makes you want to eat more. The dressing is homemade with Apple Vinegar, healthy again !

Truth be told…. a little Quinoa is good for the soul, so we can indulge in  other things….

Ingredients

Quinoa Salad

  • 1 c. rinsed quinoa and 2 cups water
  • 1/2 c. butternut squash, raisins, cucumber, tomato, & green onions chopped small
  • 1/2 c. toasted almonds, 1/3 c. fresh parsley, 1/2 tsp. salt, 1/4 tsp. pepper

Dressing

  • 1-1/2 TBSP. apple vinegar, 4 TBSP. olive oil
  • 1 tsp. honey, 1/2 tsp, cumin, 1/4 tsp salt, pepper, & cinnamon

Directions

  1. Rinse quinoa under running water three times to remove bitterness.
  2. Cook it like a rice, boil it, cover and simmer 20 minutes. Let rest 5 min. fluff with a fork.
  3. In a nonstick pan sauté butternut squash until tender (5-10 min depending on how small you diced it)
  4. In a medium bowl. combine all ingredients for dressing, stir.
  5. Add vegetables, cooked quinoa, You are done!
  6. Taste it for seasonings.

This Quinoa Salad is crunchy, chewy, sweet, and savory. These ingredients make our quinoa  “sing” oh so beautiful. I think Quinoa, is like a X-mas tree, it needs ornaments

KANIWA is cousins to quinoa, smaller seed, more texture, same health benefits

Ingredients

Kaniwa Salad

  • 1 cup Kaniwa, 2 cups coconut milk, pinch salt
  • 3 carrots in ribbons (with potato peeler), 1/2 c. corn kernels
  • 1 c. brussel sprouts/green cabbage shredded
  • 1/3 cup dried cranberries, 1/3 cup pine nuts
  • 1/2 cup fresh tarragon/cilantro/parsley-choose one

Dressing

  • 1 lemon, juice & zest, 1 minced garlic clove, pinch red pepper flakes
  • 1 tsp. soy sauce, 1 tsp. honey, 4 Tbsp olive oil, 1/2 tsp. salt, 1/2 tsp. pepper.

Directions

  1. Cook Kaniwa like rice.
  2. 1 cup kaniwa, 2 of coconut milk, bring boil, cover, simmer for 20 minutes. rest 5 minutes. (Sprouts & Barrons carry Kaniwa in bulk)
  3. Combine all ingredients, add dressing, enjoy another Salad of the future.
